When I heard of the concept of a breakfast cookie I had to try it. It sounded like a dream come true. These cookies will keep you full throughout the morning or whenever you like them.
Here’s the super easy recipe, which doesn’t require any fancy equipment. You can whip them up and have breakfast for the whole week in a few simple steps.
What you need for 9 cookies
- 2 very ripe bananas
- 150g oats
- 150ml skimmed milk (or any milk you like)
- 1 whole egg
- 5g cocoa
- 1 tbsp low-fat peanut butter (or almond butter)
- 1/2 tsp cinnamon
Preheat the oven to 180 degrees. Mash the bananas and mix it with the oats, milk and egg before adding the remaining ingredients. Put the mixture on a tray and form 9 large cookies. Bake for 20 minutes until golden brown. If you want, you can top them with chopped almonds or grated coconut flakes.
